I used to eat this whenever Buddy H and I went to a fancy schmancy French restaurant in L.A. but they closed a couple of years ago.
Le poulet fermier en croûte.
It’s almost like the chicken version of beef Wellington. A moist chicken breast coated with mushroom duxelles, wrapped with prosciutto, and encased in a golden brown pastry, served over Bordelaise sauce.
This beauty is definitely a labor of love when done properly.
