I was in a soup kinda mood with all the rain that Southern California has been hit with recently.

Thanks to Matt, for his wonderful post on chili with brown rice, which I was inspired to make it with the ingredients he listed. It was really easy to make and am very thankful for that because I’ve been working like my life depended on it so time was of the essence. I probably should have added another can of kidney beans but whatever, it still tastes damn good. I added ground turkey for more protein and heme iron cause you know… #anemialife. I also made it a tad spicier cause you know… #koreanslikeitspicy.

I also have another recipe of his that I saved that’s an egg muffin with veggies but I can’t find it right now. That’s still on my to do list.

Drop me your easy peasy but yummy recipes in the comments because I need more foods to eat at home in my rotation otherwise it’ll be my usual girl dinner (cubes of cheese and nuts). TY!

    Did you see Jolene’s (Chico’s Mom) cabbage tacos? I am gonna make them after my Friday shop- it is just like everything you want on nachos only on a bed or mixed in with braised (the braised part is my idea) cabbage.

    I’m afraid I can only offer Ramen and frozen dinners. I tend to keep it simple and fast when I cook these days. Long gone are the days of stir frys, fancy rice dishes, and pear tarts…

    Tho salmon burgers (from frozen patties) are fast, easy, and with pineapple and teriyaki sauce, delicious. This I learned the hard way while the Missus was away.

        Yes. I used to make them when going to Thanksgiving dinner at someone else’s house. Haven’t made one in over twenty years…
